John Kane shares Cheese Beef-A-Roni recipe

Carla Core Brown

Whenever I hear of an idea I consider outrageously spectacular, two thoughts automatically flash through my mind: (1.) Why didn’t I think of that; and (2.) I’m so stealing that idea!

Such is the case with John Kane’s mother, Carolyn. She thoughtfully compiled a collection of her family’s favorite recipes. What a stellar idea! The following recipe is one of Oklahoma Supreme Court Chief Justice John Kane’s all-time favorites. I think it sounds delicious, but you be the judge!

1 lb. ground beef

1 clove of garlic, chopped

1/2 tsp. Salt

1 1/2 tsp. Sugar

Dash of black pepper

1 - 8 oz. can tomato sauce

1/2 can of water

1 cup of macaroni

1/2 small package of cream cheese

1/2 cup of sour cream

1 can of diced green chiles

1 small can of sliced black olives

1/2 cup of monterey jack cheese, shredded

1/2 cup velveeta cheese, shredded

More cheese may be needed to cover.

Brown beef with garlic. Add salt, sugar, pepper, tomato sauce and water. Meanwhile, cook and drain macaroni and set aside. Add sour cream, cream cheese, chiles and olives to meat mixture, then stir in macaroni. Put in greased baking dish and top with both cheeses. Bake 30 to 45 minutes in 350 degree oven. Now how’s that for a little LOCAL FLAVOR??!!
