Season To Taste

My husband delights in teasing me about my birthday. He said once upon a time I merely had a birthday, then it rolled into a birth-week, and now I have managed to convert it into a birth-month! I would argue with him, but it would be pointless.

He is right as rain and I get a kick out of milking my big day for all it’s worth. I’ve perfected the fine art of a continuous JULY celebration and at some point between July 1 and July 31st, you can bet your last piece of birthday cake, there’s going to be a trip involved.

This year’s journey allowed me to garner another recipe to add to my collection. It made for a win-win situation…….like blowing out all the candles on the cake on the very first try.


2 cups fresh diced mangoes

½ bunch cilantro, chopped fine

¼ cup roasted red bell peppers, diced

¼ cup red onion or green onion, finely diced

The juice from one fresh lime….or use extra if it suits your taste

Mix all the ingredients and allow to sit for at least two hours for the flavors to meld. Fire up the charcoal grill and put some chicken on it! When it is done, spoon some of this simple salsa over the top. Happy Birthday to Me!
