Season to Taste
Once upon a time, Season to Taste shared one of my dear friend’s recipes for her potato soup. I say it is time for a return engagement.
When the weather turns crisp, all great minds join together in one accord and we start thinking, “stew and hot soup!” You can always get potatoes at the grocery store and they’re inexpensive enough to allow them to be served to several. Today, why not cheerfully turn them into a pot of perfection and offer this not so humble bowl of goodness to your family?
Love Thy Neighbor As Thyself Soup
Simmer until tender the following:
10-12 small red potatoes, 1 med. chopped onion, 1 can of chicken broth, 1 cup water and 1 tsp. salt.
Add: 1 can cream of celery soup, 1 cup milk, and 1 pint half and half.
In another pan: Melt 1 stick butter then add to it 1/3 cup of flour, 1 tsp. salt and 1 tsp. pepper. When well blended, add to the soup and heat through.
Garnish: 5 pieces of crisp bacon, crumbled and grated cheese.
