Season To Taste

Once in an extremely blue moon, cobalt blue to be exact, I get a wild hair for healthy living.

The urge to remove the shrink wrap from the exercise videos I’ve purchased starts to kick in and I pour over numerous diet guides for fast, easy, fool-proof ways to shed a few pounds.

(Do you remember the T.V. commercial that practically shamed us if we could, “pinch an inch.” Seriously, pinching an inch would be goal weight for me.)

But, for the time being I am in that wild hair stage and I don’t see myself taking an early exit.

So, a couple of days ago I made a delicious, HEALTHY, salad that was sensible as well as sensational.

I promise, you would never expect something so simple to taste so good.

I have no doubt I am just one tiny step closer to fit and fabulous………

Finely dice the following:

1 red bell pepper

1 Vidalia onion

1/2 green bell pepper

1/3 cup radishes

1/2 English cucumber

Chop: 1 large avocado

Mix together: 3 Tbsp. pure olive oil, 3 Tbsp. freshly squeezed lime juice, freshly ground black pepper and 1 packet of sweetener or organic sugar to taste.

Drizzle over the salad and enjoy, *I tossed in a small amount of chopped romaine lettuce just for kicks.
