HOMINY — The Friends of the Fred Drummond Home are happy to announce we now have our own page on Facebook and would like to invite the public to take a look and to please “LIKE” us! Recipe of the week is:


4 large chicken breasts

1 small onion, chopped,

1 small can of black olives, chopped

3 to 4 green onions, chopped

2 cans of cream of chicken soup

2 small cans of green chilies, mild

12 flour tortillas

¾ pound of Monterey Jack cheese, shredded

¾ pound of cheddar cheese, shredded

1 pint of sour cream

Boil chicken breasts until cooked and falling off the bone. Cool and cut into cubes and set aside. Combine soups, chilies, onions, sour cream, olives and most of the cheese and mix well. Set aside 1 ½ cups of mixture. Add cubed chicken to remaining mixture and put about three Tablespoons of mix on each tortilla and roll and place in greased baking pan. Pour remaining mixture on top of tortillas and sprinkle with cheese. Bake for 30 to 45 minutes in a 350 degree oven. Can be refrigerated over night before baking. Garnish with green onions.
